Let us welcome the brand new Vegetarian Sweet Potato Bowl, with its roasted sweet potatoes, black beans, crumbly goat cheese, arroz verde, and an agave cilantro lime sauce to bring it all together.
Not only is this new Good Measure Meals dish tasty, this meal is loaded with vitamin A from those sweet potatoes, and it packs a punch of fiber, keeping you full and satisfied while you day-dream of soaking up the sun. No need for bloat from extra sodium, either, since this veggie bowl finds its depth of flavor from the oven-roasted potatoes, the herbs mixed into the rice (Arroz Verde means “Green Rice,” and it’s green because of the delicious, fragrant herbs!), and the bright and zesty Agave Cilantro Lime Sauce. Plus a dollop of creamy and tangy goat cheese on top rounds out the flavor naturally, without the need for the levels of salt you’d find in a restaurant meal.
