Kale: One of the Surprising Stars of Our Fall and Winter Menu

Kale is All the Rage for it’s Great Taste…and its Health Benefits.

While kale has recently become trendy with foodies, Good Measure Meals has looked for innovative ways to incorporate it into our menus for some time now – most recently in our Winter menu cycle. We like it because of its delicious flavor, health benefits and nutrient-rich qualities. As a GMM customer, you’ll find kale featured as a side dish sautéed with caramelized onions and garlic, and as the star of our Kale and Cannellini Bean Soup. Both dishes have received great customer feedback.

kaleEating kale can provide a variety of health benefits, including cancer protection and lowered cholesterol. Carotenoids and flavonoids are the specific types of antioxidants associated with many of the anti-cancer health benefits. The fiber content of cruciferous kale binds bile acids and helps lower blood cholesterol levels and reduce the risk of heart disease – especially when kale is cooked.

Kale is also an excellent source of Vitamin A, Vitamin C, Vitamin K and Manganese. What’s more, it’s a good source of minerals copper, potassium, iron, manganese, and phosphorus. One cup of chopped, cooked kale contains only 36 calories, 3 grams of fiber, and 9% of the daily requirement of calcium, 354% of vitamin A, 89% of vitamin C, and 6% of iron. Bet you didn’t know it was as healthy for you as it was tasty, did you?

If you’re interested in adding more kale to your diet, try these easy preparation ideas:

* Substitute kale for other “greens” in recipes, such as spinach, collard greens or Swiss chard.
* Add kale to your favorite soup or stew recipes.
* Make kale chips by slicing kale into bite-size pieces, toss with a drizzle of olive oil and a pinch of salt, and bake for 10-15 minutes at 350 degrees in the oven.
* Add thinly sliced raw kale to a salad.
* Add cook chopped kale to tomato sauce or to lasagna.
